Fresh Egg Breakfast Bake
When you raise hens that give you golden-yolk eggs every morning, breakfast becomes something special. This easy make-ahead breakfast bake is perfect for busy mornings or weekend brunches.
Ingredients
- 8 Rambo Family Farm eggs
- 1 cup milk
- 1½ cups shredded cheese (cheddar or your favorite)
- 1 cup cooked sausage or bacon, crumbled
- 1 cup chopped spinach or kale
- ½ onion, diced
- Salt, pepper, and a pinch of herbs (thyme or parsley work beautifully)
Directions
- Preheat oven to 375°F and grease a 9x9-inch baking dish.
- In a skillet, sauté onion until soft. Add greens just until wilted.
- In a bowl, whisk eggs, milk, salt, pepper, and herbs.
- Stir in cheese, sausage, and veggies. Pour mixture into baking dish.
- Bake 25–30 minutes until the center is set and top is golden.
